Dessert -Humming Bird Cake


I made this humming bird cake many years ago and discovered it once again in my many recipes. Looking at my recipe collections has recalled memories of things years ago. Here is this good cake recipe:

HUMMING BIRD CAKE

3 cups flour ( all purpose)
2 cups sugar
3 eggs
1 teaspoon soda
1 teaspoon cinnamon
1 teaspoon salt
1 & 1/2 cups cooking oil
Plus 1 tablespoon oleo
1 (8 oz) can crushed pineapples-juice and all
2 bananas mashed
1 cup nuts & 1 cup coconut optional
DO NOT USE MIXER
Mix by spoon in above order
DO NOT BEAT
Bake at 325 degrees in Bundt or tube pan for 1 hour and 15 minutes ( or until done)
