Salad Dressing-Balsamic Vinaigrette

This dressing was also in my newspaper. I am always looking for new recipes and this one would be perfect for a salad.
BALSAMIC VINAIGRETTE
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
6 tablespoons extra-virgin olive oil
2 tablespoons minced shallot, optional
Salt and pepper to taste
Combine vinegar and mustard in a bowl. Slowly whisk in oil. Add shallot, if using, and salt and pepper to taste. If not using immediately, cover and refrigerate up to five days. Makes about 3/4 cup.

Salad-Mexican Black Bean and Corn Salad

Food, FoOD, FOOD, that is what I think about. Just posting another Mexican recipe in the spirit of Cinco de Mayo today. This Mexican Black Bean and Corn Salad claims only to have 117 calories per serving. It was also in my newspaper.

MEXICAN BLACK BEAN AND CORN SALAD
2 cans (15 ounce)black soybeans, drained and rinsed
2 cups frozen corn kernels, thawed
1 large red pepper, chopped
1/2 cup chopped red onion
1 cup chopped green onions
1 jalapeno pepper, minced
2 tomatoes, chopped
2/3 cup chopped cliantro, optional
Juice from 2 limes (about 1/4 cup)
1 1/2 teaspoon minced garlic
1 1/2 teaspoon cumin
1 teaspoon salt
1 tablespoon soybean oil
Combine the first 8 ingredients in a large bowl. Make dressing with lime juice, garlic, cumin, salt and soybean oil; combine well. Pour over salad ingredients and toss lightly to combine. Chill several hours before serving. This makes about 8 cups with 117 calories per serving.

Salad-Guacamole Salad

I am on a roll with Mexican food today. Here's another from the newspaper that sounds just too good to overlook. Have you ever put Guacamole in a baked potato? I have and it is yummy!
GUACAMOLE SALAD
2 large ripe avocados
1 teaspoon lemon juice
1 medium tomato
2 green onions with tops
2 tablespoons low-fat mayonnaise
1 tablespoon skim milk
Cut avocados in half and remove pits. Peel and place in a blender container. Sprinkle with lemon juice. Add tomato and onion. Process on low speed until mixture is smooth. Transfer to a small bowl. Mix mayonnaise and milk in a small cup until smooth. Carefully pour over guacamole salad and spread evenly to edges to seal. This helps guacamole from turning brown. Cover with plastic and chill. When ready to serve, stir in mayonnaise mixture. Makes about 6 servings.

Salad-Coke and Cherry Jell-O

Don't tell me I am the only one that has never heard of Coke and Cherry Jell-O Salad. This is another recipe from the newspaper and I am curious to know how it is. Has anyone had this salad before? Sure would like to have you post if you have tasted this salad.

COKE AND CHERRY JELL-O SALAD
1 (8-ounce) can crushed pineapple, drained
1 can Bing cherries, drained
1/2 cup chopped pecans
2 small boxes cherry Jell-O
2 cups boiling water
1 (12 ounce) can cold Coca-Cola
Mix together pineapple, cherries, and pecans and spread mixture actoss bottom of 9-by-13- inch pan.
Dissolve Jell-O in boiling water. Stirring gently, pour Coke into Jell-O
Pour Jell-O mixture over fruit mixture and chill until firm.
Makes 10 to 12 servings.

Salad-Creamy Ranch Dressing

As you know one source I have for recipes is my morning newspaper. Today there are several recipes that I am going to share. I am going to start with this dressing for salads since salads are what I am eating a lot of. This uses soymilk and is low fat. My kind of dressing.
CREAMY RANCH DRESSING
1 1/4 cups soymilk
12 ounces silken tofu, drained
1 ounce package ranch salad dressing
Mix the ingredients together, and you have a low-fat, protein filled ranch dressing. In a 1/4 cup, there are only 48 calories, as opposed to regular Ranch dressing which contains 140 calories in 2 tablespoons, or 280 calories for 1/4 cup.

Salad-Quick Fruit Salad

This is a quick and easy salad recipe.
QUICK SALAD RECIPE
1 can oranges, drained
1 can pineapple tidbits, drained
1 cup small marshmallows
1 cup coconut
1 carton sour cream
Mix together, refrigerate overnight

Salad-Curried Fruit

Just found this on a chat board and I think I am going to try it for Christmas day menu.
CURRIED FRUIT

1 can (20 oz) chunk pineapple
1 can (20 oz) pear halves
1 can (20 oz) peach halves
1 can (20 oz) apricot halves
1/2 cup raisins
10 maraschino cherries
1/4 cup butter
1/2 cup brown sugar
1 teaspoon curry powder - more or less to taste
Drain fruit; cut up as desired. Combine fruit in a 2 quart casserole. Melt margarine. Stir in brown sugar and curry powder. Pour brown sugar mixture over fruit. Cook for about 30 minutes in 350° oven.

Salad -Hot Fruit Salad

I had never heard of hot fruit salad until I found this recipe in my mother's file. I can't say that I have tried it, but thought I would share it with you. If you venture out and make it share your comment.
HOT FRUIT SALAD
1 #2 can fruit for salad
1/2 cup marchino cherries
1 c. black pitted cherries
1 c. pineapple chunks
2 bananas cut in large chunks
1/2 cup brown sugar
1 tsp curry powder
2 T cornstarch
1/4 cup melted oleo
Cut and drain fruit. Combine dry ingredients and sprinkle over the fruit. Pour oleo over all and bake 40 min. at 350 degrees. Serves 6

Salad -Layered Salad

I really enjoy making and eating a great salad. Here is a recipe that is very simple to put together and looks pretty in a trifle bowl.

LAYERED SALAD
1 head lettuce-chopped
1 bell pepper-striped
1 onion or 1 bunch green onions-chopped
1 c. celery-chopped
1/2 c. carrots-shredded or chopped
1 c. green peas-drained
2 c. chicken-chopped
Add salt and pepper. Then cover with 1 pint mayonnaise, 2 T sugar, 2 c. grated cheese, bacon crumbs from 2 slices of cooked crisp bacon or bacon bits.

Salad -Cherry Salad


Today I pulled out this recipe that I had forgotten about. It was given to me by a friend after I enjoyed it at a luncheon. It might be an addition to your Thanksgiving table since we are now looking forward to turkey day.

CHERRY SALAD
1-16 oz carton of Cool Whip
1 large can(15 oz) crushed pineapple
1 large can(15 oz) of Cherry pie filling
1 can of Eagle brand milk
1 cup of chopped pecans
optional: 1 carton frozen strawberries
Directions:
Mix pineapple and pie filling (and strawberries), add milk and Cool whip, mix in pecans. Chill and serve.

Salad -Oriental Coleslaw

I have not made this salad, but I have tasted it and I thought it was very good. A friend gave me the recipe and it is a must try. In fact I may just prepare it today or if not today very soon.
ORIENTAL COLESLAW
1/2 lg. head cabbage, shredded-set aside
4 green onions, chopped-set aside
Mix for dressing:
1/2 c. oil
3 T. vinegar
2 T. sugar
You'll also need :
1/2 c. slivered almonds, toasted
2 t. sesame seeds
1 pkg. Ramen noodles, crushed
with Ramen seasoning packet
Combine cabbage and onions. Add dressing, almonds, sesame seeds, Ramen noodles, and Ramen seasoning packet(comes in noodle pkg. ) Mix together

Salad -Broccoli Salad


I love broccoli and this salad recipe was given to me by a friend. I hope that you will like it as much as I do.


BROCCOLI SALAD
Chop up Broccoli real fine(You put the amount you want)
Chop up red onion real fine(You put the amount you want)
Cook 5 or 6 slices of bacon real crisp
1/3 cup raisins
MIX
1 cup Miracle Whip
1/3 cup sugar
2 tbl. vinegar
Pour dressing over salad, mix well. Sprinkle the bacon over the top.
